Waffles de camote sin azúcar ni harina

Hace un par de años cambié mi alimentación por una más saludable y consciente al tomar en cuenta que la falta de orden en la forma cómo me estaba alimentando terminaba provocándome mala digestión y una constante inflamación abdominal. Así que empecé a ver la manera de cambiar los ingredientes a mis recetas favoritas para seguir disfrutando de mi comida pero sin remordimiento, así es cómo hice estos waffles saludables de camote sin azúcar ni harina.

A couple of years ago, I changed my diet to a healthier and more mindful one after realizing that the lack of structure in my eating habits was causing indigestion and constant bloating. So, I started looking for ways to change the ingredients in my favorite recipes so I could continue enjoying my food without the guilt. That's how I made these healthy sugar-free and flour-free sweet potato waffles.



Fui haciendo cambios poco a poco, retiré ultra procesados y harinas refinadas y un poco de carbohidratos para reemplazar con abundante ensalada de todo tipo, esos cambios los fui compartiendo en Instagram y Youtube pero ahora iré subiendo mis recetas por aquí por si les interesa comer más ligero y saludable.

El cambio en mi organismo se hizo notorio ya que la inflamación desaparecio y con ello también la sensación de pesadez que sentía después de cada almuerzo, en el desayuno quité el pan blanco y lo reemplacé por pan integral o tostadas integrales que acompaño con un poco de proteína como huevos, palta, pero cuando deseo probar algo diferente para variar por ejemplo un fin de semana en el que deseo probar un sabor disntinto he aprendido a preparar estos waffles sin azúcar y sin harina hechos con camote.

I made changes little by little, eliminating ultra-processed foods and refined flours, and cutting back on carbohydrates to eat plenty of salads of all kinds. I shared these changes on Instagram and YouTube, but now I'll be posting my recipes here in case you're interested in eating lighter and healthier.

The change in my body became noticeable, as the bloating disappeared, along with the heavy feeling I had after lunch. At breakfast, I stopped eating white bread and replaced it with whole-wheat bread or whole-wheat toast, which I have with some protein like eggs or avocado. But when I want to try something different, for example, on a weekend when I want to try a different flavor, I've learned to make these sugar-free and flourless waffles with sweet potato.



🧇 Te comparto el paso a paso de estos waffles saludables sin azúcar y sin harina.

Ingredientes:

🍠 4 o 5 Camotes medianos sancochados 

🥚 4 o 5 huevos 1 por cada camote

🧈 2 cucharadas de mantequilla derretida 

🥄 1 cdta. de polvo de hornear 

🥄 1 cdta. de Canela en polvo 

🥄 1 cdta. de chía 

Preparación:

Aplasta los camotes sancochados en un bowl, agrega los huevos, la mantequilla derretida, la leche luego los ingredientes secos.

Procede a colocar la masa en la wafflera por 5 minutos. Sirve con la fruta de tu gusto, decora con semillas de ajonjolí y algarrobina. Los acompañé con un jugo de papaya, tú puedes acompañarlos con tu bebida favorita. 🧇☕

Con 5 camotes alcanzó para 12 waffles que pude compartir con mi familia y que les encantó porque era la primera vez que probaban unos así. Honestamente hubo un tiempo en que pensé que mi vientre inflamado no tenía remedio y que siempre iba a sufrir de este problema, pero una visita a mi nutricionista y hacer algunos cambios en mi alimentación me han ayudado mucho.

🧇 Here's the step-by-step recipe for these healthy sugar-free and flourless waffles.

Ingredients:

🍠 4 or 5 medium boiled sweet potatoes

🥚 4 or 5 eggs (1 per sweet potato)

🧈 2 tablespoons melted butter

🥄 1 teaspoon baking powder

🥄 1 teaspoon ground cinnamon

🥄 1 teaspoon Chia Waffles

Preparation: 

Mash the boiled sweet potatoes in a bowl, add the eggs, melted butter, milk, and then the dry ingredients.

Pour the batter into the waffle iron and cook for 5 minutes. Serve with your favorite fruit, and garnish with sesame seeds and carob syrup. I enjoyed them with papaya juice, but you can pair them with your favorite beverage. 🧇☕

With 5 sweet potatoes, I made 12 waffles, which I shared with my family. They loved them because it was their first time trying waffles like this. Honestly, there was a time when I thought my bloated stomach was beyond repair and that I would always suffer from this problem, but a visit to my nutritionist and making some changes to my diet have helped me a lot.

I'm someone who tends to somatize daily stress in my gut. I've learned to manage my stress through Pilates, cultivating healthy relationships, setting boundaries, and connecting with simple, everyday activities like gardening, watercolor painting, knitting, or sewing to channel stress, keep my nervous system calm, and improve my physical, mental, and emotional health. I also enjoy this new way of eating mindfully because it engages my creativity, allowing me to discover new ways to prepare my food.



🌿 Tips desinflamatorios extra

  • Toma agua tibia con limón en ayunas
  • Usa kion, cúrcuma y ajo en pequeñas cantidades
  • Come despacio
  • Camina después de las comidas
  • Duerme bien (clave para desinflamar)

  5. Good for you! I adopted the practice of mindful eating as well and I just feel so much better. It's great that you were able to find a way to recreate your favorite recipes with healthier ingredients. I try to do the same and eating this way really decreases inflammation and increases energy.

  6. Those waffles look yummy. I love what you have written about mindful eating. I agree with you that the process of preparing new food can be a creative thing, a way for us to try out something new. I think we often get stuck in a rot. It is important to make changes in our lives, especially if something does not work out for us. So many people just keep doing the same thing and complain about certain issues, without trying to make positive changes. There is always space for positive changes. Anyway, I like your approach to eating more healthy. I think another thing for me is the importance of mindful eating in the sense that I take proper time to enjoy the food and eat it. I think when we eat in a rush we enjoy the food much less. It is also important to be grateful.
    I have a lot of issues with digestion because I have Chron's disease but I realized that it often not about the food. It is about the stress in my life. It is important to find time to be present in the moment, to pray and to be grateful. I also find Pilates and exercise very helpful. I've been on a lot of immune suppressant medication (and a lot of it is very similar or in higher doses identical to chemo) for almost two decades , so my bones are damaged and my bone density is bad...That is why I absolutely need to exercise a lot.

  11. Si el camote está muy húmedo, deja enfriar el puré antes de mezclarlo.
    Para waffles más crujientes, cocínalos 1 o 2 minutos adicionales.
    También puedes prepararlos en una sartén como hotcakes si no tienes waflera.
